In my shopping at Trader Joe's today, I found a new yummy recipe on the back of a box of quinoa. Definitely worth trying! It was so good that I ate it before I could take a picture :)
1 cup red qunioa
2 cups chicken (or vegetable broth)
1 15 oz can black beans, drained and rinsed
2 cups corn (i used frozen)
1 avocado, cut up
1 pint grape tomatoes, halved
1/2 cup red onion, finely diced
Cilantro Salad Dressing (you can buy this at trader joe's)
Bunch of cilantro, chopped
Olive oil
Salt and pepper
Cook quinoa in chicken broth according to package directions. While quinoa is cooking, combine beans, corn, avocado, tomatoes, and onion. Top with salad dressing and toss gently. Add salt and pepper and some cilantro to taste. When quinoa is cooked, toss with olive oil, salt and pepper. Let cool. Then spread qunioa on plate and top with corn and bean mixture, garnish with cilantro.
